We got involved in this business concept mostly because of the unique, and vastly underrated, characteristics of freshly roasted coffee and the fact that this is generally not of common knowledge.

Green coffee beans once roasted are a fresh living food but loses its vitality and dies in about a week to 10 days. And it doesn’t matter if it’s vacuum sealed, nitrogen flushed or any other fancy packaging process ... nothing can prevent its death. No use storing it in the refrigerator or freezer, after it is roasted does more harm than good.
There are varying number of legend stories how coffee was first discovered, but the truth is, nobody actually knows ...
What we do know, is that coffee’s early usage held a mystical and spiritual importance among many cultures. Initially, coffee was prepared and consumed as part of religious ceremonies. Monks used it to stay awake at night during long periods of prayer and to attain higher states of consciousness. They were drinking coffee prepared like this, roasted in a simple pan heated just by fire.
Humanity has evolved since those days. From a handful of spiritual seekers consuming this beverage to today, where hundreds of millions of people, like yourselves, all around the world, drink coffee every single day.
And because of our desire to make this special drink available to the masses, we’ve sacrificed quality for quantity. At YAGUARA Coffee we make it our mission to recapture the mystical powerful effects of fresh roasted coffee and make these effects available to the as many people as possible, ideally to all human kind.
The branch of a coffee tree grown in Brazil, or in any part of the world for that matter, has cherries that have seeds inside. These are what we wrongly call coffee beans, they’re actually not beans, they are seeds, they are seeds of the coffee cherries.
Over 90% of these seeds come from cherries that have two seeds, they are the females, and only 5% to 10% have one seed, these are the males. Once roasted, they taste different. One is more bitter than the other but that’s a whole another talk, we’re not going to get into that.
Once these seeds are separated from the fruit, they’re dried and look like these.

Once they’re properly dried, they can be stored for months, even years. But, once roasted, they have a very short life span, and need to be consumed within a week to obtain the maximum amount of potency and freshness from them. Roasted coffee is a fresh food, and should be treated as such.

During the roasting process there are over 1500 chemical reactions that take place. Just think about that for a minute, 1500 different chemical reactions. The seeds are completely transformed from their dried, green, inert state, to their alive, fresh roasted state, where they can be assimilated by our bodies.
The seeds in this process become a pharmacological resource that can benefit our human brains and bodies with health benefits we just now have begun to discover.
Indigenous coffee cultures around the world roast their coffee with the focus on freshness, and relatively rapid consumption in order to get and benefit from all the wonderful advantages of freshly roasted coffee. All commercial coffee cultures roast coffee with focus on marketing, packaging and long shelf life. Indigenous cultures produce coffee that is alive, vital, potent. Commercial coffee cultures produce coffee that sits on the shelves for weeks and months, and is old, stale and dead.

After the coffee is roasted and cooled, it goes through a period that it needs to settle. It takes a while for the beans to settle, even though they’ve been cooled, they need this time for the properties of coffee to be unleashed, without this time they do not came about.
Some realistic and accurate tests have determined a peak potency time for coffee beans of 11 hours after roasting. And a maximum freshness cut-off date of 7 days after roasting. There are also many other studies about benefits of coffee, many of them mentioning some health benefits, simply they are not studying fresh roasted coffee they are actually studying old, dead, stale coffee, or people who drink old, dead, stale coffee.
Freshly roasted coffee has so many more health benefits that have not even been discovered yet. There are many reports showing that coffee has a lot of health benefits like it being number one source of antioxidants in the US diet. A relatively recent study showed that people who drink coffee tend to live longer. There is a lot more to discover about coffee, even though it’s been around for so long.
Many people are on a quest for the perfect cup of coffee not even knowing what that tasted like, because they never had it before. They try everything focusing their efforts on upgrading coffee making equipment but with not much real progress. It never occurs to them that the roasted coffee they are using makes all the difference because everything they try in vacuum sealed, space-age packaging, all taste the same, it is consistently old, stale and dead but they do not know it as a fact. If they just tried a freshly roasted coffee they would know immediately the diference.
The age of coffee enlightenment has begun. It’s time for a revolution, and a reinvention of the way we grow, process and prepare our food.
